I find observation a valuable tool, but
how do you record your notes?
Strategies????

I struggle with that as well. I tend to write down some observations and quotes. Recently I also filmed students while I observed them. I guess that gives us the opportunity to go back to the situation, see more than we did when it was live, and it also enables us to share what we see with the students or other teachers.
